Default output tranny for 6AK6

I'm converting an old Mono amp into a tube guitar amp.
Originally the amp used two 35C5's in push-pull.
The new amp uses one 6AK6 in single-ended.

Can I use the output transformer in the new amp?

35C5 has plate R = 13K and load R = 2.5K
6AK6 has plate R = 200K and load R = 10K

My guess is that this would be fine if I cut the center tap (2.5K + 2.5K), or I could use a Fender Champ OT (6V6 at 5K).

Is this correct?

That doesn't sound right at all! I reasoned that 6AQ5 and 6AK6 are similar tubes, with the former equivalent to a 6V6.

The biggest problem with doing that will be saturation of the core in a transformer without an air gap. It shouldn't damage anything, but I wouldn't expect the sound to be very good either.

Also, if the transformer is 2k5-0-2k5, and you neglect the centre tap, it won't be 5k. You have doubled the turns ratio which quadruples the impedance ratio. You would then have a 10k primary.

Push-pull 35C5 or 50C5 will probably use 4-5KCT. The 6AK6 uses 10K for maximum power, but you can try it... it doesn't draw much current, so it may not saturate TOO badly...
