I am finishing up a balanced preamp that uses a 1:1 input transformer. For inputs, I have some RCAs and an XLRs, and 4P3T switch.
The question is on the grounds of the RCAs. Should the grounds be switched like the negative pole of the XLR and kept separate, or should they all be connected together and connected (with the negative side of the transformer) to chassis ground, or some other variation? Suggestions?

Normally on Single Ended Inputs (like RCA) the Ground is connected to Ground on the unit. The "hot" pin (signal pin) goes to the positive input of the unit. The negative input is connected to Ground.

unless there is a balanced source you want to connect one side of the primary goes to ground, so with RCAs
