If I need a XLR balanced output I would assume that I could use a 1:1 transformer in the typical arrangement. Any better ideas for XLR out. Also I assume I could substitute 50K or 100K audio taper pot for the 47K resisto at the input for trim??

You bet!
I've even tested that.
Not without a lot of uneeded circuitry. Transformer is simply the best for balanced.
Yup! But if this is for a guitar, make sure the pot is 500K or larger.
If you build the circuit, make sure you get the sections correct on the ECC88 (pins 6, 7, 8 = U1; 1, 2, 3 = U2), because of the Vh-k breakdown is different for the sections.
