While not quite gun related, In Treasure of the Sierra Madre los banditos tell Humphrey Bogart:

"Badges? We ain't got no badges. We don't need no badges. I don't have to show you any stinking badges."

Butch Cassidy and the Sundance Kid has quite a few good quotes. One is when they are facing a bunch of bandits and the Sundance Kid tells Butch he had never shot anyone before. Butch replies something like

"Just aim for the stomach, if you are off a bit you will still hit something."
