Where can I buy Alps Blue Velvet 100KB (Japan) for balance pot in Jadis Orchestra ?

Beware, there are fake versions of this potentiometer on the market ( labelled as Alps and looking the same ). These are in fact chinese copies and they're not potentiometers but switched attenuators of questionable quality.

I am not sure how to interprete your remark. I think the world wants cheap stock from China so why complaining ?
Fake versions from original stuff comes from China in 90% of the cases. But the originals also are produced in China. Main offices in Europe, Japan or the USA, production in China. That's the filosofy of today. We wanted it ourselves, we'll bear the consequences ourselves too.
