I soldered them all correctly and left enough slack, but the wires keep touching together, maybe a little too much slack? Is there any way to fix this without re-soldering? maybe it wont happen again, but would electrical tape be okay to put on the wire? it may add too much weight and break it.
I'd do it properly. Unsolder the leads from the terminals, then as you resolder, give each one a full turn of twist between your fingers, so that when refixed, each naturally wants to spring away from the other. Oh, and make sure you haven't allowed to much slack, as the wires can slap against the cone creating a horrible ticking noise.

Half twist for your gin and tonic- that bruises the lemon skin just enough to let the flavours out of the peel without ripping the flesh.
