LTSpice actually has a very good help section in it. Look through all of the Spice Dot commands, and you should have a good idea of how to do things...
PS: use .ac to do an AC small signal analysis on gain/phase, or .tran to do a transient analysis and then plot v(vout)/v(vin) for large signal gain....

You could join the LTspice user group at http://groups.yahoo.com/group/LTspice/ . They have manuals and tutorials in the files. The LTspice manual is available as a download.
