OK so my processor's 12V trigger output is on the weak side as far as current capabilities. Let's say that I want to use it to flip a couple of relays. What's the best way? Should I buffer it somehow? Should the relays be flipped by some other means and power and the 12V is just a logic signal?

Use the 12v from the processor to switch the relays via transistors, using a 12v wallwart to power the relays.
