You will lose the current capacity of multiple outputs, that really can change the sound of an amp when driving tougher loads. Some argue that it is hard to get two of the same transistor to track each other perfectly and that can make the arguement for using only one output. I like the slam of more current and think that most modern devices are fast enough to mask any differences in the audio spectrum.
