The only DIY-projects I don't recommend as projects to learn something from is the "all in one" chip-amps. They are good for getting a new amp one has built one self, and little more. Better building an 5Watt discrete amp actually.
I agree that one can learn more by building a small discrete amp, if one is ready to learn those lessons. That really depends on the builder. If they have some electronics experience, I definitely agree...If they're looking for some experience, it might be overwhelming without a friend nearby to guide them.
Older SS amps usually have aging electrolytics so these would need to be changed.
After that potentiometers, connectors and switches can get worn.
They can also have burned resistors and burn traces on PCBs. Being previously repaired or "improved". Having dirt, dust and residue inside.
