In the future do not: "recapped it, replaced power transistors, psu diodes and a few burnt resistors" in one go, but take time to listen after every change. If there are no obvious errors, the likeliest culprits are indeed the caps. Why don't you go back to the old ones and see if your old sound is back?

If you used cheap caps for input coupling the the ESR might be quite high at high frequencies giving a poor frequency response. Like others have suggested try adding one 100nF cap in parallel and make it a good film cap.

if you replaced c5, c11, c12 than check those for correct values again. I wouldn't bother too much about grade of elcos. One could sound different than other but can't change frequency response much unless it is defective or very different value.
If you won't solve the problem, I'll be back in London on Tuesday and can help you. I live in NW1.
