I want to build some balanced to unbalanced converters for instrumentation. What's a good low-noise / low distortion op amp to use?

For instrumentation applications -- thermcouple, ultrasound, photodiode, strain bridge -- you really want an instrumentation amplifier from Analog Devices, Linear Tech or Burr Brown (TI), Rather than putting the cart in front of the horse, search by application.

Analog has a 72 page guide to Instrument Amps:

Some of the Burr Brown instrumentation amps show up in good quantity on EBay -- like the INA101, INA103 -- these are pretty expensive if you purchase through a distributor, however.
