I thought the consensus was that mos is too noisy for signal duty.

Unfortunately it's hard to find ones that come as complementary pairs. I haven't tried that many, but I have had some success with ZVN2106A/ZVP2106A, which just happen to be the first ones I tried. Zetex do a few others which might work well too.

I've done quite a few experiments here, and they are definitely far too noisy for use in an input stage, but they work well in a Vas... really well.

Of course! They work well in the normal common source VAS too though. They work well for the same reason that putting a buffer before the VAS works - they present an easy load for the input stage. You can cascode them to reduce their capacitance to improve that even further.
