I'm a huge N00B!

...so could anyone tell me what advantages/disadvantages panel projectors have over the DIY method?

By Panel I am assuming that you are meaning a Projection Panel vs a DIY (stripping down a lcd). If this is not what you mean let me know.

Projection Panel Advantages
Ease of use (just plop it on a overhead plug in the lines and go)
Somewhat portable
Very little chance of screwing anything up.

Disadvantages
Older outdated technology (640x480 is the norm although some/very few panels will do up to 1024x768).
Hard to get a good panel anymore (used to not be the case but now if you buy a panel on ebay, ya better know what you are looking for).
Some panels (Spectra C for instance) really have problems with Macrovision and you will have to take care of that issue.

another advantage is that they take rca and s-video input sometimes, depending on the panel
