Are there any independant tests of the 125s especially as to offaxis performance, or would it just be better to simulate it?
There are some independent tests (on axis). You can seach for them in this forum.
FR measurements should be measured not simulated. You can take an on-axis plot and perhaps simulate its off axis behaviour, but I don't know how accurate it would be.

"Klang+Ton" tested WR125ST and FR125S, "HobbyHifi" magazine tested all three and will develop a kit with WR125S in a TML plus Dayton PT2 ribbon. Haven't scanned all reviews yet.
Below is FR125S 0 / 30 degrees of HobbyHifi (look at the top end - up to 30000Hz!).
