I've built a 3x12ax7 + 1x12au7 preamp with tone control.
Lately, it start a strange behavior of having a constant low tick noise (sound like taping the input). I only notice it when there is no music playing.
If I swap the 12ax7 around, the noise goes away for a while. Then come back in a week or 2.
Where should I start looking?

We all have crystal balls so we can see each others circuits remotely. Unfortunately they are all away for annual maintenance at present, so it might help if you showed us your circuit using ordinary technology such as the internet. Sorry about this inconvenience.
Elaborating a bit on previous comments both a schematic and a picture or two of the offending circuit build can be quite helpful. My crystal ball cracked recently and no longer functions, I haven't had time to get over to Mt Greylock for a replacement yet.. 😀

Sounds like 'motor boating' caused by lack of decoupling or no anti parasitic grid stoppers.
