The choice of output devices is only one part of the equation. The power supply has to be able to deliver sufficient voltage and current, and the circuit has to be designed (we're talking in terms of the bias, primarily) to yield the output you want. Then, as a consequence, you'll have to provide more heatsink if you've increased the bias current.
Something to keep in mind is that higher current devices may have higher gate capacitance. It could affect the stability of the circuit. This is not an insurmountable problem, but be prepared to tinker if the amp oscillates when powered up.
