In your case you would be transforming mains voltage to 12V and than again to about +/- 40V in the amp. Efficiency of that circuit would be low.
All car amplifiers with more than 20W on the output have switching circuits inside to raise voltage.
It is good idea to open the amp and measure the voltage behind the switcher (it is usually something between +/- 20 to +/- 50V). Than you only have to build power supply which will have the same voltage you measured inside the amp when it was connected to car battery.

you could shop around in second-hand stores. I was able to get a 2000W powersupply with a 65A 12V output. very cheap.

also, I got a 12V 27A supply about the size of a PC PSU.
