I have like 400 feet of RG-59 cable laying around, I was wondering if i could use that for regular audio cable, ie. solder 1/4 jack or RCA connector at both ends and use it for lets say connecting a mic, or a guitar, or only for normal line lvl connection?

And what type of wire should i look for if i need to make stereo cable?

Some RG 59 has braded shielding, hopefull it has copper braid, that you can connect to. There is also stuff that is mostly, if not all foil shield, this would be tough to terminate. Finally some 59 has aluminum foil, witch is a real pain. What type do you have? For a guitar application I worry about a solid center conductor, as this the cable is constantly being bent, stay away from it for that application.
