Default Different voltage ratings.

Would there be a problem using different voltage ratings for the capacitors on the powersupply as long you are over the minimum amount?

Default no problem

As long as your caps are rated for a higher potential than what will actually be applied everything will be fine.....
It wouldn't be what it is, if it wasn't what it was

for an 18Vac + 18Vac transformer set up, the 25Vdc capacitors recommended are going to be right at their working limit. At peak voltage the caps will see about 27Vdc.
I would recommend you jump to 40Vdc for this use.
The main disadvantages are the increased size and cost of the caps.

The first stage smoothing will suffer very high ripple current, so take care to select suitable caps for this duty. Lots of smaller caps will usually give increased ripple capacity and sometimes cost less as well. And keep them cool, not so easy in a ClassA amplifier case.
