If you can find them, use a1N4007G (Vishay is one source). These have a specified trr of 2us, and will be more consistent than the run of the mill part, which can be all over the place - especially true of the cheaper/no-name suppliers. The same is true of the 1N54XX series - if you can get the "G" suffix parts, they're better. I see the results when doing EMI scans on SMPS at work - the G suffix parts can clean up the lower region of the EMI spectrum (200kHz and below) when used to rectify the B+ supply of an SMPS..
 
The datasheets for the Vishay 1n4007 (Tjmax 150°C) and 1n4007gp (Tjmax 175°C) show the different junction capacitance (fig6) and the different thermal impedance (fig7), otherwise these are virtually identical.

You swap switching speed (2us) for thermal reliability. Choose, no such thing as "best".
 
A 1N400* is a general purpose diode and one is much the same as another. They all must perform at the minimum specification. Some are better but not good enough to become a specific type. If you require a particular speed or performance, purchase the type best suited. Like processor speeds, they all come from the same mould but some are faster than others and are categorised as such.
