Default Can I use a 2x35V transformer as a center tap transformer?

by connecting them in series?

As long as the secondaries are 0-35 and 0-35 at the same current capacity, connecting the two centre wires together is exactly what a centre tapped transformer does.

sure, just make sure of the proper phase first before you connect them.
the current capability of the smaller will be the limiting factor.
