I just usually use the LM317 & LM337 adjustable regulators with a couple of trimpots to adjust. Works great, and these parts are generally less noisy than the fixed regulators (or so I'm told). I've used them at exactly +-16V for the fivefish.net SC-1 mic preamps (fivefish sells a nice linear power supply kit of this type for $35 -also includes +48V for phantom power for mics-- I'm not associated with fivefish in any way, but admire his work).

Use the LM317 option... If you're afraid to run short on current, use a simple power transistor as a parallel pass device. How to do that is written in the LM317 application notes.
