I have some 2x40 volt toroids lying around. Could I use them for an Aleph L ? Could the A-L run at the higher voltage by adding an extra zener in the stack, or should I get rid of the extra volts at the regulator?

I'd vote that you cut it down in the regulator a bit. I ahve heard that others have run them at higher voltages but mainly to use them to drive a power follower output stage. For use as a reamp it isn't really necessary.
