Could any one recomend me the 8 bits controler. I want to made 256 steps volume. I heard that ADC0804 is not stable when use in 8 bits mode.

The one and only
|
No it's fine, but if you put in free-running mode, then
you have to contend with the occasional LSB changing value, not necessarily the DAC's fault. A little hysteresis can fix that. |
