How come only the Aleph 30, 60 do it like this and the other Alephs do not? I'd like to build an Aleph 5, and possibly other bigger Alephs while using Brian Bells boards which coincide with A30, A60 schematics.

The 220uF cap connection are the same, just drawn differently.
I believe Nelson once said the the 1nF cap are realized by PCB track capacitance, or that the revised PCB layout made it superflous. Anyways, it is just some local high frequency feedback around the outputtransistor, and makes the amp more stable. I wouldn't worry about it, just use BGT boards and build the aleph you want ;)
