Small curvature on sinks without heat spreaders would not matter much
But you could ceck with a straigt edge (like stanley knife blade) shine same light on the back of it and have a look. To cek the whole sink you need some sort of realy flat surface Glass /Granite and a bit of oily ink rub the sink on the surface and the ink shows the hi spots. |

The whole heatsink doesn't need to be perfectly flat, just where the fet sits. A good mill file will get you there with no trouble, just keep it clean while you are working it. Then you can polish it to perfection if you would like.
