Would this phono stage have enough gain for my AT33PTG 0.5mV output cartridge, or would i need an step up transformer?

You need a stepup with the Pearl I, Pearl II should have more gain to drive passive pre's.

The pearl worked just fine with a Lyra Dorian... 0.7mV, but had squashed dynamics with a 0.2mV Mayware MC.

So i should be fine without the step up's, this appeals to me by keeping it simple, and saves more cash for vinyl.

Can you describe the sound quality of the pearl, is this a high end design?
This might sound a bit stupid, but i have only heard a couple of designs and am currently using a CA 640p, good but not considered high end.
