I'd like to know if there's a way to measue an amp's power output using a regular multimeter...?

Hi,
you need a sine wave signal source, a scope to see clip free voltage, dummy load. When you have those come back.

Most specs are for both channels driven, so you may want 2 dummy loads. For giggles, you may want two 4 ohm loads and two 8 ohm loads. The power rating of the resistor needs to be greater than the expected output.
