connecting a pot

In actual fact, you don't need to connect the third terminal of the pot at all. Think about it. You want to make a variable resistance, so you connect the wiper (centre terminal) and one end. Which end depends on if you want the resistance to increase or decrease with rotation.
Afterthought. For this application you should use a linear taper pot.

......I'd still connect the third pin. Yes, it will work pin 1 to pin 2 only. ...but if the wiper gets noisey (and maybe opens), the circuit will not get any current. If pin 2 is connected to pin 3 and the wiper gets dirty, the circuit will still get a current path through the pot resistance.
