Well you want a toroidal transformer. It depends on what you have available to you and how much you are willing to pay. There can be a large difference between a cheap one and an expensive one due to the core material and if it has a screen or not. However, expensive doesn't always guarantee quality.
Don't bother with fully potted ones, they are just for looks and worsen heat performance and are just heavy.

As far as VA rating goes, look up in the ZAPpulse cookbook to see what voltage you need for what power and load, then the VA you need is approx 1.37x the load power. Note this rule of thumb applies to class-d only.
