I realise this is quite a long shot, but has anybody created eagle part symbols for the Alps RK168-series of motorised pots that they'd be willing to share? (Pots are sold here: http://cgi.ebay.de/ws/eBayISAPI.dll?ViewItem&category=12078&item=5735198784&rd=1&ssPageName=WDVW There's a 6-gang version as well) I'm still new to Eagle and creating parts is pretty difficult I think

Have you read the Eagle help file? It explains the procedure quite well. (For obvious reasons, a spec sheet of the pot would be helpful.)
The help file is available in PDF format on the Cadsoft website.
You will also find an app note there that deals specifically with the creation of library devices (I haven't checked that file out, though, so I can't comment on it).
