As the title says: Would a N-channel JFET (i.e. 2SK373) and a multiturn trimmer pot (hooked up as variable resistor) between source and gate give a variable constant current diode?

Yes, up to the IDSS of the JFET, and up to the max Vds as well, considering the heat dissipation of the device.

NO not between sourceand gate but between source and ground with the gate toground
