Can anyone identify what mounting hole I need for these potentiometers?

For the Vishay, I'd recommend starting off with a 5mm drill bit, seeing if it fits and then if not enlarge the hole until it does. You can always take away material, but never add it back on :).

For the BI Technologies pot., I'd start with a 6mm bit, see if it fits and then, if not, move up to a 6.5mm bit. This might provide a bit of clearance round the hole but that doesn't matter.

It's not a stupid question, the datasheets aren't exactly clear about the diameter of the hole cutout. Farnell's product page doesn't help much either, as the data on there it only extracted from the datasheets.
 
have a look at those datasheets. The vishay has a 1/4" and the BI a M8 thread.
Me would try a 6,5mm drill for the vishay and a 8mm for the BI or 8mm for both, as I don't have a 6,5mm drill at home.

edit: the BI datasheet contains a drill scheme calling for 8,5 and 2,8mm drills
