Maybe this is a silly question, but in a 5.1 system; could dd/dts still be reproduced if a dual channel 31 band eq was put in the signal path between my dvd and my reviever using d/a converters?

No... if you want EQ, consider getting one of those Pioneer A/V receivers that has it built in (and with a measurement mic to automagically configure EQ and delays on each channel).
