Default if an NTC thermistor is rated...

Imax = 7.5 (0 to 65 degrees Celcius)

Does it mean you can pass up to 7.5A within the temperature range?

Is this an anti-surge thermistor? They're normally rated to be self-heated up to a low resistance when they're carrying that current.

Yes. Imax is usually the maximum steady state current rating.
