One of my favourites, though not strictly a solo, is La Villa Strangiato by Rush. Lifeson's command of the instrument and unique style virtually replace vocals in this long instrumental.
Highly underrated master.

Hello,
The solo in "December Flower" by In Flames. It is kind of difficult, but it is an incredibly beautiful solo. It is worth listening to even if you don't end up learning it. Hope that helps

OK my present favorite, Nine Types of Industrial Pollution. The solo is the song is the solo. Does 6 minutes count as a solo?

I think every song of Karate's "unsolved" has a ridiculous guitar solo on it. My favorites are on "the-lived-but-yet-named" and "halo of the strange"
