Listening to music in 2ch, vs 7ch (or other multichannel)

Hopefully this is a good place to ask this question,

I have a Yamaha RX-V1600, and can listen to 2.1 ch stereo, 2 ch stereo (pure direct), and 7.1 stereo.

Now, i'm aware of phase cancellation, and the need to change phase on a subwoofer such that it's soundwaves don't cancel out the waves of other speakers in the room, but does this same situation apply when listening to multi-channel stereo?

If you are sending a signal out of your main speakers, and then the same signal back towards them from your rear speakers, are they not just cancelling each other out?

Do some amplifiers/processors/receivers reverse the phase of the rear speakers in multi-channel stereo mode?
