Default this veneer saw will help

I don't like utility knives for cutting veneer -- if you aren't extremely careful the blade will follow the path of the grain instead of the path of the straight-edge. Here's a veneer saw which I use -- it costs only a bit more than a good utility knife and is worth the modest investment:
