I have previously finished cabinets by sanding to about 600grit and applying danish oil, this can look stunning but it gives a light amber tint to the wood which darkens over time, is there an oil that doesn't age as severely and doesn't give the wood an amber tint. I have some Beech that once sanded is a very good match for the current furnature, I don't want to oil it and find it goes darker. Is there another finish available which gives a satin like finish which is resistant to liquid and occasional knocks.

could you do a lacquer? just a clear, semi-gloss of flat brush-on lacquer? it wont change the look of the wood really, it just gives it a wet look, like the danish oil does. and it shouldnt darken over time. and of course it will protect the wood.

All wood darkens with exposure to the air and sunlight. The way this is prevented on modern commercial products is to use a UV blocking lacquer.
