Does the impedance of a speaker change drastically at frequencies higher than it can play?
I'm wondering how a simple coaxial with just a capacitor crossover for the tweeter stays anywhere near a constant impedance over frequency.

It does change, the woofer voice coil inductance raises impedance drastically as frequency rises, one reason why the woofer response falls off. The impedance of the woofer section of the coax driver goes up, but the impedance of the tweeter does not, so system impedance remains more or less constant.
