Which company has the best looking volume knob on their amps?

I'm pretty traditional but I do like the idea of a small colored LED embedded in an anodized solid aluminum knob like the Cayin amplifiers.

Since it's for a vacuum tube amp, wouldn't a neon lamp be more appropriate than an LED?

Aren't knobs a thing of the past. These days its often a button that you press and hold rather than a knob to turn :-(

Not in DIY. A dual potentiometer circuit is about 100 times easier to design and debug, than a wireless or IR remote control and electronic attenuator.

Nothing beats an old analogue mixing desk IMO:

I did a lot of live sound training on one of those (ML4000), which was lovingly named Millie. 4-man lift, though.

Any other pre-amp is just a toy, really...

That's one advantage of digital, now only a 2 man lift.

I loved the old analog mixers with their 100s of buttons, knobs and faders. Every gig you'd get some drunk come up beside you and say "Damnnnn, that's a lot of knobs." My answer was always "Yep, and I know what every one of them does." That always blew their minds.

Speaking of console knobs - I loved the old Gates radio control room consoles. Those were some real knobs! We had one similar to this where I worked.

Knobs look nice, but they are becoming less useful with modern devices that respond to voice commands or cell phone apps. I had an old prototype Sensation that I gutted to make a stereo 3-way "smart" amp controlled by an Android app, and I debated with myself whether to use the volume control and nice oversized knob. Ended up not using it--just no need for it.
