I can't speak to the hiss... but the hum is coming from your guitar or the environment.

The circuit MAY be happier in a metal box.

As far the the guitar is concerned... that's why they make humbuckers...

Hi,

Emitter-to-ground for a 2N5088 is baaaaad. Their beta is way too high (I've measured them up to 600!). You need an emitter resistor (bypassed) to control it. That'll drop your hiss by a good 20dB+.

Also, you want your output cap on the other side of that 1K resistor and reverse the polarity of both the input and output cap.

Cheers!

There are some good infos and schematics.
With a fuzz you'll always have a lot of noise and hiss. You could use a noise gate to have silence while not playing.

Without and emitter resistor on the first stage, you're probably loading your guitar pick-up down pretty hard too.

With an resistor of 750 - 1.5k on the emitter, you'll have a lot higher input impedance.
