Remember that when you want to put the 2 secondaries together to form at center tap, that tey must be put in series. Check that it is right by measuring the two ends, the voltage shall be twice the value of one secondaries.

That should be all right. The small differents in voltage is no problem.

little big problem: he does not want to be working at 12 volts.
work perfect with 10 volt .

Then he should replace the two 12V regulators with 10V models.
Ps: in my opinion it should be running on +/- 24V |

For Audio one normaly use a Logarithmic potentiometer.
