Default Cat5 cable for video

How do the cat5 "video extension" boxes work? They take in an RGBHV or Y-Pb-Pr signal through a VGA socket at one end and have an RJ45 socket at the other, allowing you to transmit video over cat5 cable.
Do these things have video a ADC in them and transmit digitally? Or do they have some kind of impedance-matching interface so 75R isn't required?
