Looks like we've found a solution that meets our criteria and mail is now active again.

It took some serious debugging, but it appears that one of the recently patches applied by our hosting company was incompatible with the security precautions we take for our webserver processes, and no amount of library wrangling would get it back into shape. We've found another solution which doesn't compromise security and has us on our way again...
