Can I make a DIN to DIN interconnect with screened twisted pair cable (one pair) using the pair to carry left/right stereo signals and the screen the earth?

Yes, but you might get some crosstalk between channels - depends upon impedence, cable length etc.
Better to use twin individually screened cable. |

You can use (round) microphone cable, with individually shielded internal wires.
