Do you want to build an ADC, a DAC, or both? I you want to build both I suggest the TLV320AIC23B from Texas Instruments, which is a codec that can run at 24/96. Do not be impressed by the low cost, since it performs very well and the quality of audio is premium at that specs. You must be sure to do a optimal PCB, grounding, decoupling, etc.
