Hi,
I look for datasheets of those chips. Anybody knows if they can output 18 bit data and which is the control pin for that ? I want to "upgrade" PCM56 CDPs with PCM61 which is pincompatible

SM5807 can't output 18 bit AFAIK. I have the datasheet but no time to find it...
Forget about PCM61 but please try AD1860/1861 instead.
