I'm looking for a spdif transmitter which can support multichannel 5.1 format with 192kHz framerate.
The maximum speed of S/PDIF is 6Mbit/s. 6 channels of 192 kHz @ 16 bits is 18 Mbit/.s, @24 bits it would be 27 Mbit/s.

Full-resolution audio on HDMI data is protected by HDCP encryption and not easily accessible.
I'm looking for an interface to connect my audio design to an AV receiver ideally in digital (because I don't want to have DACs and CINCH connexions for each channels). My need is only to transmit audio data to the AV receiver.
Does your AV receiver have a HDMI input? If so, that is definitely the easiest solution.
yes, I have a ONKYO AVR which have HDMI inputs... but you said that there is protection on HDMI ... does it exist chip wich could provide me audio interface (without video ...) ? or a chip with both, which could be interfaced with FPGA or µP ?
The AVR should be able to decode the encrypted signal.

No, and I do think HDMI is beyond DIY. What kind of source are you trying to design?
